Whole Grain Millet Flour (Ragi, Bajra, Jowar), Oat Flour, Jaggery, Corn Flour, Baking Powder, Baking Soda, Salt, Cocoa Powder, Vanilla.
Heat a non stick pan on medium flame. Lightly grease it for the first pancake. Whisk curd and oil in a bowl. Add the pancake mix. Stir gently to combine. Do not overmix. Ladle 1/4 cup of batter onto the pan. This is a good time to add toppings like fruit or chocolate chunks. Flip the pancake when bubbles appear on the surface and the edges start to set. Cook for 2 minutes on the other side till golden brown. Cook the remaining pancakes similarly. Serve with butter and a drizzle of your favorite jam, syrup or honey. You can also replace half the oil with an egg or half a mashed ripe banana.
